Our Highland Beef Recipe that is super simple and delicious
I think it’s time for us to share a simple yet delicious grass fed beef recipe. There’s a chill in the air and winter is right around the corner. All signs lead to slow-cooker season! We absolutely love cooking highland beef this way. By cooking it slowly and letting all the natural juices come out, the beef finishes tender and mouthwatering. Plus the benefits of throwing everything in a pot and walking away is hard to beat.
Reasons to use a slow cooker for grass fed beef

- Set it and forget it. It’s just how it sounds, add your ingredients in the morning and come home to a delicious meal.
- Super simple to use. Even if you have limited skills in the kitchen, you can produce a high quality meal.
The Highland Grass Fed Roast – easily our favorite recipe.
Ingredients:
Highland Roast (our favorites are chuck and sirloin tip)
2 Onions
5 Carrots
4 Potatoes (small/medium)
2 Cloves Garlic
½ tbs. Olive oil
Salt/Pepper to taste

Fresh herbs such as thyme and rosemary, squash, sweet potatoes, and celery. You can also add some red wine, beef broth, even soda or a dark beer. The possibilities are endless so try some different varieties and explore your taste buds.
Cooking Times
Put all ingredients, except the potatoes (or any fresh herbs) in slow-cooker. Cook on low 4 hours. Add potatoes and fresh ingredients and cook for another 1-2 hours. If you enjoy really soft potatoes you can add them in at the same time as the meat. (Cooking time varies with size of roast) but you can always stick a fork in it to see how tender the meat it.
Tips to cook a delicious Grass Fed Highland Beef Roast in the crock pot.
- Always set the temperature to low and allow the roast to cook for an extended period of time. While you may be able to save some time by cooking it on high, you will most certainly be disappointed that your meat is not tender and most likely chewy.
- For an added boost of dynamic flavor give your roast a nice pan sear in the frying pan before putting it in the slow cooker. For a simple pan sear heat up the pan to medium-high with a tbsp of grass fed butter or olive oil. Salt and pepper both sides of the roast and put into the pan once it is hot. You just want to get a basic browning or char on the outside of your roast which takes about 1 minute per side. What this does is seals the moisture and creates a dynamic flavor when finished.
